My Kind of Pie
For my friends who follow me on IG and FB, this recipe is in relation to the post on June 16/17.
½ cup pure maple syrup
1 Tablespoon pure vanilla
1 Tablespoon coconut oil
2/3 cup raw cocoa powder
½ raw coconut meat
Put all ingredients into a blender until smooth
½ cup almonds (soaked in fresh water for 8 hours)
¾ cup pecans
¾ cup walnuts
2 Tablespoon raw honey or pure maple syrup
2 teaspoons cinnamon
Pinch of Himalayan salt
In a food processor, chop nuts into a fine meal
Add maple syrup or honey until well mixed
Add cinnamon & salt
Press evenly into a pie plate
To assemble the pie, add sliced bananas & shredded coconut on the crust before spooning in chocolate mousse.
Sprinkle with more coconut and voila!!!
*For those of you with nut allergies my friends, substitute with seeds such as sunflower, hemp, pumpkin and chia. They will work just as well!!
