Whisk the olive oil, lemon juice, maple syrup, salt & pepper in a bowl
Add the dressing to the grated beets and nuts
Garnish with cilantro & serve at room temperature
Hello my friends, as promised, here is the recipe that coincides with my IG post "Just.Beet.It"
This is the original recipe given to me by one of my wonderful instructors at CSNN. I used 1 cup each of carrots & beets, and chose to slivered almonds. The cilantro I kept, but you could also use parsley. Mint would probably taste great as well as being chlorophyll rich since it is a dark green herb. Personally, I prefer this salad when it is chilled and has had a chance to sit as this really brings out the magnificent flavours!
Beets are one of those liver supporting powerhouses. They may be eaten raw, steamed or roasted. I often throw them in my daily shake along with ginger and cinnamon, as they pair well with warm spices. I've also blended them into a homemade roasted garlic hummus with some cumin. Absolutely delicious and nutritious.
Look for future recipes with these nutrient dense vegetables....Consequently, beets are also very "grounding" as they are both red in colour and are root vegetables.
